Yam & Banana Raisin Spice Muffins

Wonderful spice muffins with a Bruce’s twist!

Ingredients:

  • - Dry Ingredients -
  • 1 ½ Cups oats (old fashioned oats, not steel cut)
  • 1 ¼ Cups All Purpose flour
  • 2/3 Cup granulated sugar
  • ⅓ Cup raisins
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon Kosher salt (optional)
  • 1 teaspoon cinnamon
  • 1 pinch ground nutmeg
  • 1 pinch ground mace
  • 1 pinch allspice
  • - Wet Ingredients -
  • 1 whole egg
  • ¼ cup avocado or vegetable oil
  • 1 teaspoon vanilla
  • 1 Cup of mashed Bruce’s sweet yams (drained fully and mashed)
  • ½ Cup over ripened banana (Nice and ripe works too, yams are very moist, so these treats won’t be lacking moisture)
  • - Muffin Topping Ingredients -
  • ½ Cup of old fashioned oats
  • 2 Tablespoon dark brown sugar
  • ¼ teaspoon cinnamon
  • 2 Tablespoons melted butter

Steps to Prepare:

  1. Set oven to back at 375°F
  2. In a medium - large bowl, add your dry ingredients together and mix (make sure to exclude your muffin topping ingredients until the end!) Oatmeal, flour, sugar, raisins baking powder, baking soda, cinnamon, mace, nutmeg, allspice, and salt.
  3. In a smaller bowl, mix together the oil, eggs, and vanilla until smooth
  4. Fold the wet ingredients for the muffins into the dry ingredients and mix well, let rest for five minutes.
  5. While allowing the mix to rest, mix your muffin topping ingredients (make sure to melt your butter!).
  6. Spray or line your 12 muffin pan with non stick coating or muffin liners.
  7. Stir your muffin mix, and begin to fill your trays( If the mix seems slightly dry you can add 1-2 Tablespoons of milk) Sprinkle your muffin oat topping onto the muffins before placing them into the oven.
  8. Bake at 375 for 20 minutes in the oven.
