  • 1 1/2 (15 oz.) cans Bruce’s Yams Cut Sweet Potatoes, drained
  • 1 1/4 cups white sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/3 cup water
  • 1/2 cup pecans
  • powdered sugar (optional)

Steps to Prepare

  1. In a small mixing bowl, combine eggs, sugar and oil; beat well.
  2. In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg.
  3. Stir flour mixture into egg mixture alternately with water. Once combined, stir in Bruce’s Yams Cut Sweet Potatoes (drained) and chopped pecans.
  4. Pour batter into greased 9×5 inch loaf pan. Bake at 350°F for 50 minutes or until inserted toothpick comes out clean. Dust with powdered sugar, if desired.
